My Frugal Diet

Well after all the questions and comments on my food bill this month I thought I would expand the discussion a bit with a tale of my frugal diet.

So to keep things fair and to not impress anyone anyone here is my meals this week (Keep in mind my wife’s diet is a little different since she runs the daycare at home and cooks her own lunch daily.  It’s a complete setup four week menu including snacks for the kids.  The daycare leftovers feed into my diet as lunches some times):

Monday

  • Breakfast: Coffee, Two muffins – I can’t recall which type I have three types in the freezer right now.
  • Lunch: Leftovers, Piece of fruit, juice (in a reusable container), yogurt, snack item (pumpkin seeds).
  • Supper: Ground Beef Cups (Lean ground beef, half a can of mushroom soup, bread crumbs, salt, pepper and cheddar cheese.  Mix and add into butter slices of bread pushed into a muffin.) Served with green beans/carrots mix.

Tuesday

  •  Breakfast: Coffee, Two muffins
  • Lunch: Leftovers, piece of fruit, juice, pudding, snack item (honey roast peanuts)
  • Supper: Five spice shrimp with green onions severed on rice with peas on the side.

Wednesday

  • Breakfast: Coffee, bagel
  • Lunch: Leftovers, piece of fruit, juice, yogurt, snack item (pretzel twists)
  • Supper: We had planned on a orange pork stir fry, but then something happened and we decided to eat out instead  (don’t ask what happened, its personal and leave it alone). Supper was fast food with picking up cheese cake on the way home from the grocery store.  I don’t even what to think on how bad that meal was in total (high fat, salt, calories).   Good thing I only eat out like that perhaps twice a month at tops.

Thursday

  • Breakfast: Coffee, Two muffins
  •  Lunch: Leftovers, piece of fruit, juice, yogurt, snack item (pretzel twists)
  • Supper: Garlic, onion and mushroom soup mixed together and poured over pork chops. Bake.  Serve with rice, and mixed veggies.

Friday

  • Breakfast: Coffee, Toast
  • Lunch: It would normally be leftovers, but I promised last week to go out for lunch with someone.  I still take a piece of fruit and a snack item for a mid morning snack.
  • Supper: Butter chicken, curried chick peas with onion and tomato, with rice and pitas.

Mmm, looking back this week we ate a lot of rice.  Not very normal, but then some weeks we eat a lot of pasta.  Next weeks suppers are not locked in yet, but this is what is on the rough menu: Bombay chicken (spices, honey and mustard over chicken- I LOVE IT), peanut ginger pasta, hot and sour soup (with pork), cheese strata (leftover bread crusts with an egg mixture poured over top with cheese- you bake it in a water bath).  Weekends consist of a least one morning with a big breakfast (either eggs, pancakes, waffles, French toast with bacon or sausage) and cleaning up leftovers for lunch  and what ever I get inspired with cooking for supper or if something needs to get used up.

Now after writing all that I’m very hungry.  I’m going to have breakfast now.  Have a good weekend.

    I’ve been trying to get my partner to have a weekly meal plan but she’s more spur of the moment.

    The one thing we’ve done that seems to help save a lot of time and some $ is to make really big dinners then eat it for a 2nd night or lunches.

    For example on Wednesday we made a huge turkey tetrazzini dish that has become 2 lunches and another serving will be frozen for easy re-heat later.
